Region: KiamboMchana Estate is unique in Kenya for using natural processing techniques for their coffee. This motivates the pickers to harvest only the ripest cherries.
After harvest cherries are floated so that the heaviest and ripest cherries can be identified. After selection they’re fermentation in water for 24 hrs then washed and dried on raised beds for 21-28 days until optimal moisture levels are reached. Dried cherries are then hulled and prepared for processing.
